Recipe: Skillet Chicken & Rice

This easy weeknight meal cooks up in less than 30 min and is great in a thermos on the go.

Ingredients:

2 or 3 Boneless Chicken Breasts, cubed

2 Cups Instant Rice

1 Jar Salsa (16 oz)

Package of Frozen Corn, Frozen Zucchini, any frozen veggie you like

Brown the cubed chicken in olive oil. Add jar of salsa (sometimes I use a jar and a half if I have a lot of chicken…), the frozen veggies and a cup of water. Bring to a boil. Then add in 2 cups of rice. Stir it all up, reduce heat to simmer, and cover. Let it simmer for at least 5-7 minutes so the rice can soak up all the salsa.

This saves very well as leftovers and is travels well in a thermos.
