Crock Pot Balsamic Chicken

Crock Pot Balsamic Chicken, Potatoes and Carrots

This meal is easy to prep and leftovers freeze well. It’s also a great “take along” meal when put in a thermos. Perfect for a healthy weeknight meal for parents/siblings at the field.

INGREDIENTS:

  • 1 jar Newman’s Own Balsamic Dressing (or your dressing of choice)

  • 4 Chicken Breasts

  • 1 - 2 large potatoes, peeled and cut into cubes

  • 1 onion, peeled and quartered

  • 4-5 large carrots, peeled and cut up

DIRECTIONS:

Step 1

Place the potatoes, carrots and onion into the bottom of the crock pot. Cover with the chicken breasts. Pour the bottle of dressing over the entire thing, Don’t freak out - it looks like a lot but it’s a marinade…you’re not eating it like soup!

Step 2

Cover and cook on low for 8-10 hours, or high for 4-6 hours. Freezes VERY well and makes great leftovers.
